Here’s a quick breakfast recipe that your kids can reheat and enjoy!
I don’t know about you, but my kids love oatmeal! However, they disagree on what toppings they like on their oatmeal. So, here’s a simple recipe about cooking a big pot of oatmeal and allowing them to choose whatever fruit they prefer:
1 canister steel cut oats (4 cups)
1 cup milk (your choice)
¾ cup pure maple syrup
2 tsp vanilla extract
1/4 tsp. nutmeg
1 tsp cinnamon
Cook the oats according to package directions, only add ½ cup more water and cook a few minutes under the recommendation. The oats should still be tender but not all of the liquid will be gone. You want it nice and creamy so you can get it into the jars easily. It also helps the oats to stay creamy.
While the oats are cooking you can prepare the fruit and set aside until ready to assemble.
When the oats are done stir in the milk, vanilla, nutmeg and cinnamon.
Set the jars up like an assembly line. Go down the row and add a layer of oats, then fruit, oats, then finish with fruit.
Let cool, put on the lids, and refrigerate. These jars should last for most of the week and are easy to reheat in the microwave and eat quickly or on the go.
Note: Another idea is to just put the oats in the jar and allow the kids to add the fresh fruit daily.
For those that prefer the fruit already in the jar here is what you will need:
1 box strawberries, washed and quartered or sliced
1 small box blueberries, washed
2 bananas, peeled and sliced
Note: You can always replace the fruits listed with fruits that you prefer. Ex. Raspberries instead of strawberries, or sliced peaches instead bananas.
